Afternoon Delight: Caramel Slice

Conquer that post work/uni/school 4pm sugar craving with the healthiest possible version of your worst enemy (also known as your best friend) – caramel slice

INGREDIENTS

Almond base
1 cup fresh dates
1 cup almonds
1 tbsp coconut oil

Caramel layer
1 cup fresh dates
1/2 cup coconut oil
1 1/2 cups tahini (sesame paste)
1 cup raw unsalted cashews
1/2 cup water

Chocolate topping
1/4 cup coconut oil
1/4 cup raw cocao powder
1 tbsp sweetener (rice malt syrup, maple syrup, agave)

Method
1. Line a baking tray with grease proof paper
2. In a food processor, place dates (make sure the seeds are removed!), almonds, and oil, and blend until a breadcrumb texture is formed.
3. Press almond mixture into the bottom of the tray and place in the freezer
4. For the caramel layer, place cashews in the food processor until a buttery cosistency is formed (this may take 5 minutes)
5. Add dates, oil, tahini and a pinch of sea salt in with the cashews and blend until the mixture resembles a caramel (add water in necessary)
6. Pour caramel on top of almond base and place in the freezer
7. For the chocolate topping, place oil, cocao powder, and sweetener of choice in a saucepan and melt until combined. Pour over caramel layer.
8. Place in the fridge for 2 hours or overnight until set
9. Enjoy for the next week!
